Waffles
Belgian-style buttermilk, crisp outside and tender inside.
Maui's an app that plans a whole week of dinners like this one. See how it works ↓
Cornstarch in the flour mix and whipped egg whites in the batter. Those two together are the difference between a sad pancake-in-a-waffle-shape and an actually-crispy Belgian-style waffle.

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Preheat waffle iron and a 200°F oven (for holding cooked waffles).
- Separate the eggs (yolks to wet bowl, whites to smaller bowl for whipping).
- Melt butter, cool slightly.
Dry mix
Whisk flour, cornstarch (this is the crisp secret), sugar, baking powder, baking soda, salt in large bowl.
1 min · hands onWet mix
Whisk buttermilk and yolks and melted butter and vanilla in another bowl until smooth.
1 min · hands onWhip whites
Whip egg whites with a clean whisk until soft peaks form (1-2 min). This adds the air that makes the inside fluffy.
2 min · hands onCombine
Pour wet into dry, fold until JUST combined (lumps OK). Gently fold in whipped whites - don't deflate them. Let batter rest 5 min.
5 min · hands offCook waffles
Brush waffle iron with a tiny bit of melted butter (first waffle only). Ladle batter into iron - fill about 75% (it expands). Close, cook per iron's directions (usually 3-4 min) until deep golden. Transfer cooked waffles to oven rack to stay crisp.
15 min · hands onPlate
Stack on plates, top with a pat of butter and maple syrup.
1 min · hands onMake it yours
Every swap here is one Maui already knows how to make, including what it does to the timing.
Brown 4 chicken sausage links 6 min in a second pan while waffles cook. Adds about 8 minutes.
Cook bacon in skillet while waffles cook. Adds about 10 minutes.
Whip 1 cup cream and 2 tbsp powdered sugar; scatter berries. Adds about 5 minutes.
What keeps
Waffles are best straight off the iron. To hold for a crowd: rack on a sheet pan in a 200°F oven (not stacked, not covered - needs air to stay crisp).
To freeze: cool, freeze on a tray, bag, reheat in toaster.
