Dry beans = burger that holds. Wet beans = compost. The 10-min pat-dry is the single biggest difference between a good veggie burger and a sad one.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Drain and rinse the beans. Spread on a paper-towel-lined tray, pat dry, and let sit 10 min - wet beans = mushy burger. (You can even bake them 10 min at 350°F to dry further.).
  2. Finely dice ½ medium onion. Mince garlic. Slice tomato, red onion, avocado.

Sauté aromatics

Heat olive oil in the skillet over medium. Cook diced onion 4 min until soft. Add garlic, cumin, smoked paprika; cook 60 sec until fragrant. Off heat, cool 3 min.

Build patty mix

In food processor, pulse beans 4-5 times - you want chunky, not smooth (smooth = paste, paste = mush). Transfer to large bowl. Add oats, panko, sautéed onion mix, salt, pepper. Mix with hands until it holds together when pressed.

Shape patties

Divide into 4 portions, form into 4-inch patties about 3/4-inch thick. Refrigerate 10 min to firm up (skip only if rushed).

Sear

Heat remaining oil in skillet over medium-high. Cook patties 4-5 min undisturbed until deeply crusted underneath. Flip carefully (they're delicate), cook 4 min more.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of black beans Chickpeas

Sub canned chickpeas 1:1 for black beans - slightly nuttier, holds together same way.

Instead of served on bun With oven fries

Start fries first - they need 25 min at 425°F. Adds about 25 minutes.

Swap With cheese (vegetarian, not vegan)

Top patties with cheese slice during last minute of cooking.

Gluten free Gluten-free burger buns for potato burger buns, gluten-free panko for panko breadcrumbs, for rolled oats

Check label - use certified gluten-free oats.

What keeps

Patties freeze raw beautifully - shape, freeze on a tray, bag. Cook frozen at 375°F oven for 20 min flipping once.

Cooked leftovers reheat in skillet 3 min/side.

The Week tab: breakfast, lunch and dinner laid out on the grid, with a Sunday cook of avocado toast and black bean tacos and a Wednesday cook of a berry smoothie bowl.
A week that gets more like you Start with the cuisines you crave, your spice level, and anything you'd rather avoid. It plans around the days you actually cook, not a default Sunday. Then every dish you rate teaches Maui, so your weeks keep moving toward your taste instead of settling into a routine.
Cook mode showing a Sunday session of 3 recipes and 18 steps, with one combined prep list where garlic is marked used in all 3 recipes and spring onions are marked Korean BBQ plus Thai Basil.
