The slashes in the chicken aren't optional - they're how the marinade gets past the skin-side surface and seasons the meat. Skip them and you'll get color but not flavor.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Remove skin from chicken. Slash each piece 2-3 times to the bone.
  2. Mince garlic and ginger. Juice the lemon. Thinly slice red onion.
  3. Chop a small handful of cilantro.
  4. Rinse basmati.
1

Marinate

Whisk yogurt, half the lemon juice, oil, garlic, ginger, garam masala, kashmiri chili, cayenne, turmeric, cumin, coriander, kasuri methi, and salt in a bowl. Add chicken, massage marinade into the slashes. Cover, refrigerate at least 1 hour - ideally 4-12 hr.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of bone-in chicken thighs and drumsticks Boneless chicken thighs

Broil 5 min per side instead of 8-9. Saves about 8 minutes.

Instead of bone-in chicken thighs and drumsticks Paneer

Cube paneer, marinate, thread onto skewers, broil 4 min per side. Saves about 10 minutes.

Instead of bone-in chicken thighs and drumsticks Extra-firm tofu

Press tofu 15 min, cube, marinate, broil 4 min per side. Saves about 10 minutes.

Instead of basmati rice and sliced onion Naan

Warm naan 1 min per side in dry skillet.

What keeps

Cooked chicken keeps 4 days. Marinade does the heavy lifting - marinate the full batch raw, freeze portions in marinade for up to 2 months, thaw and cook.
