Tamago Don (Egg Rice Bowl)
Silky soft-scrambled egg, dashi-soy broth, rice and scallion.
Maui's an app that plans a whole week of dinners like this one. See how it works ↓
Beat the eggs ONLY until streaky - like 6 chopstick strokes. Fully-mixed eggs scramble into uniform yellow rubber; streaky eggs set into silky ribbons with white and yellow zones, the way Japanese cooks intend.

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Start rice.
- Beat eggs LIGHTLY in a bowl - chopsticks for ~6 strokes, leave streaks of white. Over-beaten eggs go rubbery.
- Slice onion, scallions; cut nori strips.
- Wipe kombu with damp cloth.
Quick dashi
Combine 1.5 cup water and kombu in skillet. Heat to just-before-simmer (~6 min); remove kombu. Brief boil, add bonito, OFF heat, steep 2 min. Strain back into the same skillet.
9 min · hands offSeason and onion
Add soy sauce, mirin, sugar, onion. Simmer 4 min until onion is soft and broth tastes balanced.
4 min · hands onPour eggs
Bring broth to a steady (not rolling) simmer. Pour beaten eggs in a swirl across the surface. Cover with a lid for 90 seconds - DON'T STIR. Eggs should still look soft and barely-set when you lift the lid; they'll finish on the rice.
2 min · hands onBowl up
Scoop rice into bowls. Slide the egg and onion and broth in one motion over the rice (use a wide spatula to keep curds intact). Top with scallions, nori strips, pickled ginger.

Every swap here is one Maui already knows how to make, including what it does to the timing.
Start brown rice ~40 min ahead. Adds about 20 minutes.
What keeps
Tamago don is a make-to-order dish - the silky soft-scramble doesn't survive a reheat. You CAN make the dashi base ahead.
Cook eggs fresh per bowl.
