Maui says

Olive oil and flaky salt over honeyed ricotta sounds odd until you try it. The salt sharpens the sweetness, the olive oil adds fruity depth, and suddenly a 3-ingredient breakfast tastes like something a chef built. Don't skip them. Use the good olive oil here - this is one of the recipes where it actually shows.

Ingredients

Everything below makes 2 servings.

  • 4 slicessourdough breadthick slices, 1/2-inch
  • ¾ cupwhole-milk ricotta
  • 2 tbsphoneyfor drizzling
  • 1 tsplemon zestfrom 1 lemon, finely zested
  • ¼ tspvanilla extract
  • 2 tspextra-virgin olive oilthe good stuff - for finishing
  • 1 pinchflaky sea saltfor finishing

In the app these rescale to however many people you're feeding.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Zest the lemon (just the yellow - the white pith underneath is bitter).
  2. In a small bowl, whisk the ricotta with vanilla until it loosens and turns slightly fluffy, 30 sec - this is the whip move that makes it spreadable not gloopy.
1

Toast bread

Toast the bread slices until deep golden - toaster on high, or 400°F oven 5 min, or under the broiler 2 min watching closely. You want crisp edges, not just warm bread. Soft toast under ricotta turns sad fast.

Spread ricotta

Spread a generous whipped ricotta over each warm toast, all the way to the edges. The toast should disappear under a soft cloud.

Finish

Drizzle honey across each toast in lazy zig-zags. Shower with lemon zest. Drizzle olive oil. Pinch of flaky salt over the top - the salt and honey and olive oil is the move that makes this taste like a restaurant instead of a snack. Eat immediately.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Swap With a soft-boiled egg on the side

Lower 2 eggs into boiling water 6.5 min, ice bath, peel, halve over the plate. Adds about 8 minutes.

Instead of served as the whole breakfast With fresh berries

Scatter a handful of strawberries or raspberries over the top - extra sweetness and color. Adds about 2 minutes.

Instead of served as the whole breakfast With crushed pistachios

1 tbsp toasted crushed pistachios - adds tree-nuts allergen, only if no nut allergy. Adds about 1 minutes.

Instead of whole-milk ricotta Cashew or oat-based 'ricotta'

Plant ricotta whips similarly - looser texture, sweeten same way.

What keeps

Toast goes soggy under ricotta within 10 min. This is the kind of breakfast you make 5 min before you eat.

The ricotta whip CAN be made ahead (3 days fridge) and spread day-of.
