Cashew crema is the secret weapon - it makes any vegan bowl feel cohesive instead of like a pile of ingredients. Double the batch; it keeps a week and works on everything.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start

  2. Drain and rinse black beans. Finely dice ½ medium onion. Mince 2 garlic cloves.
  3. Soak cashews in hot water 10 min (skip if you have a Vitamix-style blender).
  4. Slice avocados. Chop cilantro. Juice 2 limes; cut the third into wedges.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of black beans Extra-firm tofu (cubed and roasted)

Toss cubed tofu with sweet potato seasoning; roast on the same sheet pan. Adds about 5 minutes.

Instead of brown rice White rice

White rice cooks in 18 min instead of 40. Saves about 20 minutes.

Instead of brown rice Cauliflower rice

Sauté cauliflower rice 4 min in olive oil with salt. Saves about 35 minutes.

Instead of cashew lime crema Mexican crema

Whisk Mexican crema with lime juice and salt; skip the cashew step.

What keeps

All three components hold 5 days in the fridge - meal-prep gold. Build bowls cold or microwave-warm; reserve avocado and crema for serving.

A week that gets more like you Start with the cuisines you crave, your spice level, and anything you'd rather avoid. It plans around the days you actually cook, not a default Sunday. Then every dish you rate teaches Maui, so your weeks keep moving toward your taste instead of settling into a routine.
