Against the grain. Look at the steak, find the lines running through it, cut perpendicular to those lines. Flank cut WITH the grain is shoe leather. Flank cut against the grain is butter.

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Pat the flank steak very dry. Season aggressively with 1 tsp salt and ½ tsp pepper. Let sit at room temp 20 min.
- Finely chop parsley and cilantro. Mince garlic. Halve tomatoes. Shave red onion thin.
Make chimichurri
In a small bowl, combine parsley, cilantro, garlic, oregano, red pepper flakes, red wine vinegar, salt. Whisk in olive oil. Let sit at room temp while steak cooks - needs 15 min to bloom.
4 min · hands onSear steak
Heat the cast iron over high until smoking. Add remaining olive oil. Sear flank steak 4 min per side for medium-rare (130°F internal). Transfer to a board, tent with foil, rest 8 min.
16 min · hands onSlice
Slice the steak THIN and AGAINST the grain (look for the long muscle fibers and cut perpendicular). This is non-negotiable with flank - wrong direction = chewy.
3 min · hands onCompose
Pile greens onto a platter. Scatter tomatoes and red onion. Arrange sliced steak across the top, drizzle with half the chimichurri. Season with remaining salt and pepper.
3 min · hands onServe
Pass remaining chimichurri at the table - people will want more. Serve any pooled steak juices over the salad too (free flavor).

Every swap here is one Maui already knows how to make, including what it does to the timing.
Skirt cooks faster - 2 min per side max. Saves about 3 minutes.
Same cook as flank; rest 5 min before slicing.
Warm bread alongside while steak rests.
Shave 0.25 cup parmesan over the finished salad.
What keeps
Chimichurri keeps 1 week in the fridge - make a double batch. Cold sliced steak is great on day 2 over fresh greens; don't try to reheat.
Greens go limp once dressed.
