Steak + Eggs
Pan-seared sirloin, fried eggs and buttered toast.
Maui's an app that plans a whole week of dinners like this one. See how it works ↓
Take the steak out of the fridge 20 min ahead. Cold steak hits a hot pan, contracts, and squeezes out juice. Room-temp steak relaxes into the heat and stays tender.

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Take steak out of fridge 20 min ahead. Pat very dry. Season aggressively with 1 tsp kosher salt and ¾ tsp black pepper, all sides.
- Smash garlic, set out herbs.
Sear steak
Heat cast iron over high until smoking. Add olive oil. Lay steak in. Sear 3 min UNDISTURBED for a crust. Flip, cook 2-3 min more for medium-rare (130°F internal).
6 min · hands onButter baste
Drop butter, garlic, rosemary, thyme into the pan. Tilt pan and spoon the foaming butter over the steak for 60 sec. Transfer steak to a board, tent with foil, rest 8 min - non-negotiable.
9 min · hands offToast bread
In the bask-butter skillet, lay bread slices, toast 90 sec per side until golden and butter-soaked.
3 min · hands onFry eggs
Heat remaining butter in nonstick over medium. Crack in eggs. Cook 3 min for runny yolks. Season with salt and pepper.
3 min · hands onSlice and plate
Slice the steak against the grain. Divide across 4 plates with a fried egg and slice of toast each. Pour any board juices over the steak.

Every swap here is one Maui already knows how to make, including what it does to the timing.
Same cook - ribeye is just richer (and pricier).
Same cook as sirloin.
Grate and squeeze a russet potato, crisp in skillet during steak rest. Adds about 10 minutes.
Brown 8 oz cremini in the steak pan during rest. Adds about 5 minutes.
What keeps
Fresh-only. Steak overcooks on reheat.
Eggs go rubbery. Cold sliced leftover steak IS great over greens for a workout-lunch - don't fight the temperature change, embrace it.
