The sweet potato is doing more work than it looks - it absorbs glaze, gets caramelized edges, and balances the chile. Don't skip it.

  2. Whisk gochujang and gochugaru and soy and brown sugar and sesame oil and garlic and ginger for the glaze.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of boneless skinless chicken thighs Chicken breast

Breasts overcook fast - sear 2-3 min per side, finish in glaze 5 min. Saves about 5 minutes.

Instead of boneless skinless chicken thighs Extra-firm tofu

Press tofu 10 min, cube, sear 3 min per side, then glaze 5 min. Saves about 5 minutes.

Instead of short-grain white rice Lettuce wraps and rice

Add 1 head red leaf lettuce, washed and separated. Adds about 5 minutes.

Gluten free Tamari for soy sauce, for gochujang

Verify GF gochujang - many brands contain wheat.

What keeps

Glazed chicken keeps 4 days fridge, reheats well in a covered skillet. Cook rice fresh.
