Pinch the rim while the masa is still warm - wait too long and it cracks. If you don't have a comal, a cast iron works perfectly.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Finely dice ½ medium onion (for beans), set rest aside for garnish.
  2. Mince 3 garlic cloves. Shred romaine. Finely dice tomato. Chop cilantro. Crumble queso.
  3. Wedge lime.

Form and cook bases

Divide masa into 12 balls (about golf-ball size). Press each into a 3.5-inch disc, about 1/4 inch thick. Heat dry comal/skillet over medium-high. Cook discs 2 min per side until lightly golden and cooked through.

Pinch and crisp

Working quickly while warm, pinch up the edge of each disc with fingers to form a 1/4-inch rim (like a tiny pizza crust). Brush both sides with olive oil, return to skillet 1 min per side until edges crisp.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of refried beans Shredded chicken

Add 1.5 cups shredded chicken warmed with onion and cumin on top of beans. Adds about 5 minutes.

Instead of refried beans Chorizo (pork, not halal)

Crumble and brown 1/2 lb chorizo, drain, layer on top of beans. Adds about 5 minutes.

Instead of queso fresco and crema None

Skip cheese and crema; extra cilantro and lime.

Dairy free For queso fresco, for Mexican crema

What keeps

Cook masa bases and refried beans ahead (3 days). Assemble fresh so the masa stays crisp and lettuce doesn't wilt.

The Week tab: breakfast, lunch and dinner laid out on the grid, with a Sunday cook of avocado toast and black bean tacos and a Wednesday cook of a berry smoothie bowl.
A week that gets more like you Start with the cuisines you crave, your spice level, and anything you'd rather avoid. It plans around the days you actually cook, not a default Sunday. Then every dish you rate teaches Maui, so your weeks keep moving toward your taste instead of settling into a routine.
Cook mode showing a Sunday session of 3 recipes and 18 steps, with one combined prep list where garlic is marked used in all 3 recipes and spring onions are marked Korean BBQ plus Thai Basil.
Three dishes, one prep list Everything chopped once, combined across every recipe in the session. Then Maui interleaves the steps so a marinade rests while something else browns.
