Shrimp Fajitas
Smoky shrimp, charred peppers, warm tortillas and lime.
Maui's an app that plans a whole week of dinners like this one. See how it works ↓
Shrimp goes from raw to rubber in seconds - pull them as soon as the second side curls and turns opaque. Carryover heat in the pan does the rest.

- Toss shrimp with cumin, chili powder, smoked paprika, juice of 1 lime, 1 tbsp olive oil, ¾ tsp salt. Rest 10 min.
- Slice peppers and onion into strips. Mince 3 garlic cloves. Chop cilantro. Wedge 1 lime.
Char peppers

Every swap here is one Maui already knows how to make, including what it does to the timing.
Press tofu, cube, sear 3 min per side instead of shrimp's 2-3 total. Adds about 2 minutes.
Use 2 corn tortillas per portion.
Use 2 per portion - corn tortillas are smaller and tear more easily.
Press and cube before searing.
What keeps
Slice and season peppers ahead, marinate shrimp up to 4 hr. Day-of takes 12 min.
Do NOT reheat cooked shrimp - texture suffers.
