Salmon en Papillote

The seal is everything - if your packet leaks steam during baking, the salmon poaches instead of steams and the vegetables stay raw. When in doubt, crimp tighter. Aluminum foil works in a pinch but loses the elegant table moment.
Ingredients
Everything below makes 4 servings.
- 4salmon fillets (skinless, 6 oz each)patted dry

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Preheat oven to 400F.
- Julienne the leek, carrot, and zucchini into thin matchsticks - speed matters less than uniformity, they need to cook through in the 14-min window the salmon takes.
- Slice shallot and garlic thinly. Zest half the lemon, then slice the whole lemon into 8 thin rounds.
- Cut 4 sheets of parchment, each roughly 15x12 inches.
Build the veg bed
Fold each parchment sheet in half, then unfold. On one half of each sheet, mound a quarter of the julienned leek and carrot and zucchini. Scatter shallot and garlic over. Drizzle with olive oil. Season with a pinch of salt.

Pat salmon dry, season both sides with salt and pepper. Place one fillet on each vegetable mound. Sprinkle with lemon zest. Top each with butter, 2 lemon rounds, 1 thyme sprig, and a few dill fronds. Drizzle white wine over each.

Fold the parchment back over each salmon. Starting at one corner, make small overlapping folds all the way around the edge to create a tight half-moon seal - like crimping a giant empanada. The packet must be airtight so steam builds inside. Transfer all 4 to the baking sheet.

Bake at 400F for 14 min. The packets will puff dramatically as steam builds - that's the magic. The salmon is done when it's just opaque but still tender in the center; the parchment will be golden.

Transfer each puffed packet to a plate. Bring to the table sealed. Cut an X in the top with kitchen scissors and let everyone open their own - the burst of lemon-dill-butter steam is the whole experience. Scatter remaining dill over.

Cod is leaner and cooks faster - pull at 11-12 min instead of 14. Saves about 2 minutes.
Halibut is denser - bake 15-16 min. Adds about 1 minutes.
Start rice (1 cup) 15 min before plating. Adds about 18 minutes.
Warm a baguette while packets bake.

Papillote is theatre - the unwrap at the table is the whole point, with the steam and aroma escaping. Reheating ruins both the salmon and the moment.
Cook fresh. You can assemble the packets 4 hr ahead, refrigerated, and bake when ready.
