Persian Tahdig with Saffron Chicken

If your saffron is precious, here's the move: grind it with a pinch of sugar BEFORE adding water. The sugar crystals act as tiny mortars and pull way more color and flavor out of each thread than just steeping whole threads.
Ingredients
Everything below makes 4 servings.
- 2 cupsbasmati ricerinsed until water runs clear, soaked 30 min if time allows
- 1¼ lbboneless skinless chicken thighscut into 2-inch chunks
- ½ tspsaffron threadsground with a pinch of sugar, bloomed in 3 tbsp hot water
- 1 largeyellow onionthinly sliced
- 3garlic clovesminced
- ½ tspground turmeric
- ¼ tspground cinnamon
- ½ cupplain whole-milk yogurt
- 3 tbspunsalted buttermelted
- 2 tbspolive oil
- 1lemonjuiced (about 2 tbsp), plus wedges for serving
- 2 tbspdried barberriesoptional - substitute dried cranberries (chopped) if unavailable
- 2 tspkosher salt
- ½ tspfreshly ground black pepper

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Rinse basmati 3-4 times until water runs clear. Soak in cool salted water 30 min if time allows (improves separation).
- Grind saffron with a pinch of sugar between two spoons. Bloom in 3 tbsp hot (not boiling) water for 10 min - it should look like deep amber tea.
- Cut chicken into 2-inch chunks. Thinly slice onion. Mince garlic. Juice lemon.
Cook chicken
Heat olive oil in a wide skillet over medium. Add onion, cook 5 min until soft. Add garlic, turmeric, and cinnamon, cook 30 sec. Add chicken with salt and black pepper, brown 5 min. Pour in 1/2 cup water and lemon juice and half the saffron water. Cover and simmer 20 min until tender. Uncover and reduce until just-glazed, 3-4 min more.

Bring 6 cups water and 1 tsp salt to a rolling boil. Drain the soaked rice and pour in. Boil 5-6 min - grains should bend but still have a firm core (bite one). Drain immediately in a fine-mesh sieve and rinse with cool water to stop cooking.
6 min · hands onBuild the tahdig
In a small bowl, mix yogurt and 2 tbsp melted butter and 1 tbsp saffron water and 1 cup of the parboiled rice. Spread this mixture evenly across the bottom of the (washed, dry) non-stick pot - this is your future crispy crust.
2 min · hands onLayer and steam
Mound the remaining rice on top of the yogurt layer in a pyramid shape (helps steam circulate). Poke 4-5 holes down to the bottom with the handle of a wooden spoon. Drizzle with the rest of the melted butter and 2 tbsp water. Wrap the lid in a clean kitchen towel (catches condensation), cover tightly. Cook on medium-high 5 min until you hear sizzling, then drop to low and steam 35 min.
40 min · hands offFlip and plate
Drizzle remaining saffron water over the top of the rice (turns the crown golden). Scoop the white rice onto a serving platter, leaving the crusty bottom in the pot. Invert the pot over the platter and tap - the tahdig should release as one golden disk. (If nervous: scoop the crust out in pieces - still delicious.) Spoon chicken alongside, scatter barberries over rice.

Brown skin-side first; simmer 40 min for fall-off tender. Adds about 15 minutes.
Dice 1 cucumber and 2 tomatoes and 1/2 red onion, dress with lemon and olive oil. Adds about 10 minutes.
Stir 1 cup yogurt with grated cucumber and dried mint and salt. Adds about 5 minutes.
What keeps
Tahdig is a fresh-only dish - the crispy crust softens within an hour and is the whole point. Chicken alone can be batched for 3 days; rebuild rice fresh.
