Don't stir constantly when the noodles hit the pan - let them sit 30 sec at a time to actually catch and char. That smoky edge is what makes pad see ew different from any other noodle dish.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Soak dried noodles in warm tap water 30 min if using dried (skip if fresh). Drain.
  2. Whisk soy sauce, dark soy, oyster sauce, fish sauce, and sugar in a small bowl.
  3. Slice chicken thin against the grain.
  4. Separate Chinese broccoli stems (slice on bias) from leaves (2-inch lengths).
  5. Mince garlic. Beat eggs.

Char the noodles

Add remaining oil and drained noodles. Pour sauce over. Toss gently 2-3 min - you want some noodles to catch and char in spots. That smoky-charred edge is wok hei; it's the whole point of pad see ew.

Finish

Return chicken to the wok. Toss everything 30 sec to reheat and coat. Taste - pad see ew should be savory-sweet-smoky. Plate.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of chicken thighs Beef sirloin

Slice thin against the grain; stir-fry 90 sec until just browned.

Instead of chicken thighs Extra-firm tofu

Press 10 min, cube, sear until golden in step 1.

Instead of chicken thighs Shrimp

Stir-fry shrimp 90 sec; remove and add back at end. Saves about 2 minutes.

Gluten free Tamari for soy sauce, gluten-free dark soy sauce for dark soy sauce, gluten-free oyster sauce for oyster sauce

Or substitute 1 tbsp tamari and 1 tsp molasses.

What keeps

Wide rice noodles get gummy when reheated - best cooked fresh. Mise in advance; the stir-fry takes 6-7 minutes once the wok is hot.
