Add vegetables to the wok in order of how long they take - broccoli and carrot first, then bell pepper, then snow peas. Three minutes total, max. Anything longer and the snow peas wilt.

  • 1 mediumcarrotthinly sliced on the bias
  • 1red bell peppersliced
  • 6 ozcremini mushroomshalved or quartered if large
  • ¾ cupbaby corndrained, halved lengthwise
  • 1 cupsnow peastrimmed
  • 5garlic clovesminced
  • 2 tbspsoy sauce
  • 2 tbspvegan oyster sauce (mushroom)
  • ½ tspsugar
  • ¼ tspwhite pepper
  • 2 tbspneutral oil
  • 1 tsptoasted sesame oil
  • 1½ cupsjasmine ricerinsed

Before you start
  1. Start jasmine rice.
  2. Cut broccoli into florets; slice carrot on bias; slice bell pepper; halve mushrooms; halve baby corn; trim snow peas.
  3. Mince garlic. Whisk soy, vegan oyster sauce, sugar, white pepper, and 2 tbsp water in a small bowl.

Hot wok and garlic

Heat the wok over high heat 1 minute. Add neutral oil and garlic; stir-fry 15 sec until very fragrant.

Harder vegetables first

Add broccoli, carrot, and mushrooms. Stir-fry 2 min - they take the longest.

Softer vegetables

Add bell pepper, baby corn, and snow peas. Toss 90 sec - you want everything tender-crisp, not soft.

Sauce and finish

Pour sauce around the edges of the wok. Toss 30 sec to coat. Off heat, drizzle sesame oil; toss once.
