The pinch of salt is the whole difference between overnight oats that taste like breakfast and overnight oats that taste like wet cereal. Sweet things need salt to read as flavour rather than just sugar. Do not skip it.

Ingredients

Everything below makes 2 servings.

  • 1 cuprolled oatsold-fashioned, not instant - instant turns to paste
  • 1 cupwhole milk
  • ½ cupplain Greek yogurt
  • 2 tspchia seedsoptional, but they thicken it properly
  • 2 tbspmaple syrup
  • ½ tspvanilla extract
  • 1 pinchkosher salt
  • 1 cupmixed berriesfresh or frozen - frozen thaw overnight right in the jar
  • 3 tbspsliced almondstoasted, for the top

Before you start
  1. Toast the sliced almonds in a dry pan over medium heat until they smell nutty and turn one shade darker, 3 min. They keep a week in a jar - do a big batch once and stop toasting them every time.

Stir it all together

In a jar or bowl, stir the rolled oats, chia seeds, whole milk, plain Greek yogurt, maple syrup, vanilla extract and kosher salt until there are no dry pockets. It will look far too wet. That is correct - the oats drink most of it overnight.

Fridge overnight

Lid on, fridge, at least 4 hours and ideally overnight. Nothing else happens tonight.

Top and eat

In the morning, stir once - it will have set firm - and loosen with a splash more milk if you like it looser. Pile the mixed berries and sliced almonds over the top. Eat cold, straight from the jar.
