Slice against the grain. Skirt and flank both have long, obvious muscle fibers running one direction - your knife goes 90 degrees across them. Slicing the other way gives you chewy strings.

Ingredients

  • 1¼ lbskirt or flank steak
  • 3 tbspuncooked jasmine or sticky rice (for toasted rice powder)
  • 3 mediumshallotsthinly sliced
  • 3scallionsthinly sliced
  • ½ cupfresh mintleaves only
  • ½ cupfresh cilantrochopped
  • 3 tbspfish sauce
  • 4 tbspfresh lime juice
  • 2 tspThai or red chile flakes
  • 1 tsppalm sugar (or brown sugar)
  • 1 tbspneutral oil
  • 1cucumbersliced (for serving)
  • 1 headbutter or romaine lettuceleaves separated
  • ½ tspkosher salt

  1. Pat steak dry; let sit at room temp 20 min.
  2. Slice shallots and scallions thin. Pick mint; chop cilantro. Juice limes. Slice cucumber; separate lettuce.

Toasted rice powder

Toast the uncooked rice in the dry skillet over medium heat 5-6 min until deep golden brown. Cool, then grind to coarse powder.

Sear steak

Heat grill or cast-iron skillet over high heat 3 min. Rub steak with oil and salt. Sear 3-4 min per side for medium-rare (internal 130°F). Transfer to cutting board; rest 5 min - non-negotiable. Nam tok means 'waterfall' for the juices that run when you cut it; you only get that if you rest.

Build dressing

In a large bowl, whisk fish sauce, lime juice, chile flakes, and palm sugar until sugar dissolves.

Slice and toss

Slice steak thin against the grain. Add to the bowl with shallots, scallions, mint, cilantro, and toasted rice powder. Toss gently.

Plate

Pile salad in a shallow bowl. Surround with cucumber and lettuce leaves for wrapping. Serve with rice on the side.
