Maui says

The finishing drizzle of raw extra-virgin olive oil is the secret - Italians do it on every soup. Cooked oil tastes flat; raw oil is bright and peppery and ties everything together. Don't skip.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Dice onion, carrot, celery. Mince garlic.
  2. Cube potato and zucchini into 1/2-inch pieces.
  3. Strip and chop kale. Drain and rinse the beans.
1

Soffritto

Heat olive oil in the pot over medium. Add onion and carrot and celery and salt. Cook 8 min until softened and sweet - don't rush this; it's the flavor base. Add garlic, cook 1 min.

Build broth

Stir in crushed tomatoes, cook 2 min. Add potato, zucchini, beans, stock, rosemary sprig, and remaining salt. Bring to a boil, then drop to simmer.

Finish

Ladle into bowls. Drizzle each with a generous spoon of extra-virgin olive oil - this is the move that ties it together.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of white beans Shredded chicken

Stir in 2 cups shredded rotisserie chicken in the last 5 min of simmer. Adds about 5 minutes.

Instead of white beans Ground turkey

Brown 1 lb ground turkey with the onion before adding stock. Adds about 8 minutes.

Instead of served with crusty bread With grilled cheese

Make 6 grilled cheese sandwiches while soup simmers. Adds about 8 minutes.

Instead of no dairy With parmesan rind in broth and grated parm on top

Drop a 2-inch parm rind in with the stock; finish bowls with grated parm.

What keeps

Soup keeps 4 days fridge or 2 months frozen - actually better on day 2. Cook pasta SEPARATELY if storing more than a day, or it bloats in the broth.

Reheat gently on stovetop with a splash of water.

The Week tab: breakfast, lunch and dinner laid out on the grid, with a Sunday cook of avocado toast and black bean tacos and a Wednesday cook of a berry smoothie bowl.
A week that gets more like you Start with the cuisines you crave, your spice level, and anything you'd rather avoid. It plans around the days you actually cook, not a default Sunday. Then every dish you rate teaches Maui, so your weeks keep moving toward your taste instead of settling into a routine.
Cook mode showing a Sunday session of 3 recipes and 18 steps, with one combined prep list where garlic is marked used in all 3 recipes and spring onions are marked Korean BBQ plus Thai Basil.
