Loaded Hash
Crispy potato, onion, pepper, chicken sausage and fried eggs.
Maui's an app that plans a whole week of dinners like this one. See how it works ↓
Leave the potatoes alone for the first 5 min in the pan. Every toss steals crispness. The first side has to brown fully - then you can stir.

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Dice potatoes into uniform 1/2-inch cubes (the SIZE consistency matters more than the exact dimension).
- Dice onion and bell pepper. Mince garlic. Slice sausage into coins. Slice green onions.
Crisp the potatoes
Heat olive oil in cast iron over medium-high. Add potatoes in single layer, season with salt and pepper. Cook UNDISTURBED 5 min for one crispy side. Toss, cook 8 min more, tossing every 2 min, until potatoes are deeply golden and cooked through.
13 min · hands onAdd sausage
Push potatoes to one side. Add sausage coins to the empty side. Brown 2 min per side. Then stir together with potatoes.
4 min · hands onAdd aromatics

5 min · hands onFry eggs
In small nonstick, heat remaining olive oil over medium. Crack eggs in carefully. Cook 3 min for runny yolks (or however you like them). Season with salt and pepper.

Every swap here is one Maui already knows how to make, including what it does to the timing.
Same cook as chicken sausage; breaks halal.
Skip sausage; add an extra bell pepper and 1 cup mushroom. Saves about 3 minutes.
Pass Cholula or Tabasco at the table.
Toast 4 slices sourdough alongside. Adds about 5 minutes.
What keeps
Hash (without the egg) keeps 4 days. Reheat in a skillet over medium-high to re-crisp.
Fry eggs fresh each serving - that's a 3-min job.
