Adding the yogurt slowly, tablespoon by tablespoon, off the heat - this is the trick that separates restaurant rogan josh from home cook rogan josh. Dump it in at once and it curdles into sad little white specks.

Everything below makes 6 servings.

  • 2½ lbboneless lamb shouldercut into 1.5-inch chunks
  • 2 largeyellow onionfinely diced
  • 1 cupplain whole-milk yogurtwhisked smooth
  • 2 mediumRoma tomatochopped
  • 8garlic clovesminced
  • 2 tbspfresh gingerminced
  • 3 tbspghee
  • 1 tspfennel seedslightly crushed
  • 5green cardamom podslightly crushed
  • 2black cardamom podslightly crushed
  • 4whole cloves
  • 1cinnamon stick
  • 2bay leaves
  • 2 tspkashmiri chili powder
  • 1½ tspground cumin
  • 1½ tspground coriander
  • ½ tspground turmeric
  • 1 tspgaram masala
  • ¼ cupfresh cilantrochopped
  • 2 cupsbasmati ricerinsed
  • 2 tspkosher salt
  • 3 cupswater

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Cube lamb shoulder 1.5 inches; pat dry.
  2. Finely dice onion. Mince garlic and ginger. Chop tomato.
  3. Whisk yogurt smooth. Lightly crush cardamoms and fennel seeds.
  4. Chop a small handful of cilantro.
  5. Rinse basmati.

Sear lamb

Heat ghee in dutch oven over medium-high. Season lamb with salt. Sear in batches 3 min per side until deeply browned. Remove.

Bloom whole spices

Add remaining ghee. Add fennel, both cardamoms, cloves, cinnamon, bay - bloom 45 sec until very fragrant.

Onion base

Add onions and salt. Cook 10-12 min over medium, stirring often, until deeply golden - don't rush, this builds the gravy color.

Spice paste

Add garlic and ginger; cook 1 min. Add tomato; cook 4 min, mashing, until jammy. Stir in kashmiri chili, cumin, coriander, turmeric - toast 30 sec.

Add yogurt

Reduce heat to low. Stir in yogurt 1 tbsp at a time, letting each addition meld before adding the next - this prevents the yogurt from splitting. Should take 4-5 min total.

Braise

Return lamb and any juices. Add 1.5 cups water and remaining salt. Bring to simmer, cover, reduce to low, braise 75 min until lamb is fork-tender. Stir once at 40 min.

Rice

Last 25 min of braise: combine rice with water and salt. Bring to boil, cover, simmer low 15 min, off heat 10.

Finish

Uncover lamb. Stir in garam masala. Simmer uncovered 5 min if gravy needs reducing. Taste, adjust salt. Scatter cilantro.
