Three-tortilla layer doesn't work here - keep it ONE corn tortilla, the slaw is what gives crunch. Roy Choi's Kogi taco logic: beef and acid and crunch and heat.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Freeze ribeye 30 min, then slice paper-thin against the grain.
  2. Whisk soy and grated pear and mirin and brown sugar and sesame oil and garlic and ginger for marinade. Toss with beef; rest 20 min.
  3. Shred napa, julienne carrot, slice scallions. Pick cilantro leaves. Juice 1 lime; wedge the rest.
  4. Whisk sour cream and lime juice and pinch salt and 1 tsp sesame oil for crema.
  5. Toss napa and carrot and 2 scallions and rice vinegar and pinch salt for the slaw.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of ribeye bulgogi Chicken thigh bulgogi

Slice thin, marinate same way, sauté 4 min. Adds about 5 minutes.

Instead of ribeye bulgogi Extra-firm tofu

Press and slab, marinate 15 min, sear 3 min per side.

Instead of kimchi and lime wedges and extra crema Rice and kimchi bowl (skip tortillas)

Bulgogi over rice - same flavors, no taco. Adds about 20 minutes.

Instead of sour cream Mexican crema

Mexican crema is thinner - drizzles better.

What keeps

Marinated beef freezes 1 month raw. Slaw and crema keep 2 days fridge.

Assemble tacos fresh - tortillas go soggy if pre-loaded.

The Week tab: breakfast, lunch and dinner laid out on the grid, with a Sunday cook of avocado toast and black bean tacos and a Wednesday cook of a berry smoothie bowl.
A week that gets more like you Start with the cuisines you crave, your spice level, and anything you'd rather avoid. It plans around the days you actually cook, not a default Sunday. Then every dish you rate teaches Maui, so your weeks keep moving toward your taste instead of settling into a routine.
Cook mode showing a Sunday session of 3 recipes and 18 steps, with one combined prep list where garlic is marked used in all 3 recipes and spring onions are marked Korean BBQ plus Thai Basil.
Three dishes, one prep list Everything chopped once, combined across every recipe in the session. Then Maui interleaves the steps so a marinade rests while something else browns.
Maui chat: the user asks to swap tonight for something easy, and Maui offers Caprese Salad and Avocado Toast with a confirm step.
