Korean BBQ Chicken
Soy-pear-garlic marinated chicken thighs, charred and lettuce wraps.
Maui's an app that plans a whole week of dinners like this one. See how it works ↓
This is the halal-friendly cousin of beef galbi - same flavor logic, no alcohol marinade needed. Chicken thighs hold the soy-pear glaze without getting tough.

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Trim chicken thighs of excess fat; leave whole.
- Grate pear and onion and ginger. Mince garlic. Slice scallions (split).
- Whisk soy and pear and brown sugar and sesame oil and garlic and ginger and grated onion and half the scallions and pepper for marinade.
Marinate
Toss chicken with marinade in a bowl or bag. Refrigerate 2 hr minimum, overnight ideal.
120 min · hands offHeat grill
Heat grill or grill pan to medium-high. Lightly oil the surface.
8 min · hands offGrill
Shake excess marinade off chicken. Grill 5-6 min per side until internal 165F and edges deeply charred. Sugar in the marinade chars fast - watch heat.

Rest chicken 5 min. Slice across the grain. Pile on platter. Scatter scallions and sesame seeds. Serve with lettuce and ssamjang and rice.

Every swap here is one Maui already knows how to make, including what it does to the timing.
Slice in half horizontally to even thickness; grill 4 min per side max. Saves about 3 minutes.
Bone-in needs 7-8 min per side; finish in oven if browning too fast. Adds about 10 minutes.
Skip the wraps.
Add kimchi alongside.
What keeps
Marinated chicken freezes 1 month raw. Cooked chicken reheats well - slice it cold over salads or grain bowls all week.
