Jok is one of those breakfasts that looks like nothing - until you taste it. The whole dish lives or dies on the toppings, so don't skip the fried garlic or the runny yolk; that's where all the flavor is.

Ingredients

Everything below makes 2 servings.

  • ½ cupjasmine ricerinsed until water runs clear
  • 6 cupsvegetable broth (or chicken broth)
  • 1 inchfresh gingerthinly sliced into matchsticks
  • 2large eggs
  • 2scallionsthinly sliced (greens only for topping)
  • 2 tbspfresh cilantrochopped
  • 3garlic clovesthinly sliced (for fried garlic topping)
  • 1 tbspsoy sauce
  • ¼ tspwhite pepper
  • 1 tsptoasted sesame oil
  • 2 tbspneutral oil
  • ½ tspkosher salt

Before you start
  1. Rinse rice 3 times until water runs clear - this is what makes jok creamy instead of starchy-gloppy.
  2. Matchstick the ginger. Slice scallions; chop cilantro. Thin-slice garlic for the topping.

Long simmer

Combine rinsed rice, broth, ginger, and salt in the saucepan. Bring to a boil, then drop to lowest simmer. Cook uncovered 40-45 min, stirring every 10 min, until rice has broken down completely and the porridge is silky - texture should be loose oatmeal, not clumpy.

Fried garlic

Heat neutral oil in the small skillet over medium. Add sliced garlic; fry 90 sec to 2 min, watching closely, until pale gold - it goes from gold to burnt in 10 seconds. Drain on paper towel. Reserve the garlic oil.

Soft-boil eggs

Bring a small pot of water to a simmer. Lower eggs in with a slotted spoon; simmer 6.5 min for a runny yolk and just-set white. Drain; rinse cold; peel.

Season and serve

Stir soy sauce and white pepper and sesame oil into the porridge. Ladle into bowls. Halve the soft-boiled eggs and place on top. Shower with scallion, cilantro, and fried garlic. Drizzle some of the reserved garlic oil over.

Mix 1/2 lb ground chicken with white pepper and soy and cornstarch; form small balls; drop into porridge in the last 10 min. Adds about 5 minutes.

Add peeled shrimp in the last 3 min until pink. Adds about 3 minutes.

Instead of soft-boiled egg Silken tofu (vegan)

Spoon scoops of silken tofu on top instead of egg.
