Salt the coins and let them weep for ten minutes before you flour them. Everything else about this dish is forgiving; skipping that step is the difference between browned edges and pale, soggy ones.

Ingredients

Everything below makes 2 servings.

  • 2zucchinisliced into 1/4-inch coins
  • ½ tspkosher salt
  • ⅓ cupall-purpose flour

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Slice zucchini into 1/4-inch coins - thinner and they go limp, thicker and the middle stays raw.
  2. Salt the coins on both sides and rest 10 min on paper towels, then blot dry. This is the whole recipe: wet zucchini steams instead of browning.
  3. Whisk the dipping sauce: soy sauce, rice vinegar, scallion, gochugaru, sesame seeds, sesame oil.
  4. Set up two shallow bowls - flour in one, beaten egg in the other.
1

Dredge

Working with a handful at a time, toss the blotted zucchini coins in flour and tap off every loose speck - flour left sitting on the surface turns gluey in the egg.

2

Heat the pan

Heat oil in the skillet over MEDIUM. Too hot and the egg browns before the zucchini softens; the coins want about 2 minutes a side.

Egg and fry

Dip each floured coin in beaten egg and lay it straight into the pan, leaving room between them. Fry 2 min until the egg sets pale gold, flip, and give it 1-2 min more. Don't crowd the pan - do it in three batches.

Repeat

Drain each batch on paper towels. Add another tablespoon of oil between batches and let it come back up to temperature before the next round.

Serve

Pile the coins on a plate and serve warm with the soy-vinegar dip alongside. They are best within the hour - the lacy egg edge softens as they sit.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of egg-dredged Egg-dredged with a shrimp pressed into each coin

Press one small peeled shrimp into the egg side before it sets, then flip - the shrimp cooks against the pan (adds shellfish). Adds about 5 minutes.

Instead of egg-dredged Flour-only, no egg

Skip the egg bath - dredge in seasoned flour alone for a thinner, crisper coin (removes eggs). Saves about 3 minutes.

Instead of soy-vinegar dipping sauce With steamed short-grain rice as a main

Serve the coins over rice with the dip spooned across. Adds about 20 minutes.

Instead of soy-vinegar dipping sauce As banchan alongside another dish

Halve the portion and serve at room temperature.

What keeps

Best within the hour - the egg coat softens as it sits. Salting and slicing the zucchini can be done a day ahead; fry to order.

A week that gets more like you Start with the cuisines you crave, your spice level, and anything you'd rather avoid. It plans around the days you actually cook, not a default Sunday. Then every dish you rate teaches Maui, so your weeks keep moving toward your taste instead of settling into a routine.
