Maui says

LOW heat is the secret. Crank it up and the eggs scorch and tear. Slow and gentle gets you the soft, pale, pillowy rolls that look professional.

Ingredients

Everything below makes 2 servings.

  • 5large eggs
  • 2scallionsfinely sliced (just the greens for color)

  • ¼red bell peppervery finely minced

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Finely mince carrot and bell pepper. Slice scallion greens.
  2. Whisk eggs in a small bowl with soy sauce and sesame oil and salt and vegetables until uniform but not foamy. Strain through a fine sieve for the smoothest texture (skip if rushing).
1

First layer

Heat neutral oil in pan over LOW-medium - gyeran mari is a low-heat dish. Pour in 1/3 of the egg mixture; tilt pan to coat. Cook 1-2 min until almost set but still glossy on top.

2 min · hands on
2

Roll

Using spatula, gently roll the egg sheet toward you into a tight log at one end of the pan. Don't worry if it tears - the next layer hides everything.

1 min · hands on
3

Second layer

Push the rolled log to the back of the pan. Add another teaspoon oil if needed. Pour in another 1/3 of the egg mix, lifting the existing log so the new egg flows underneath and connects. Cook 1-2 min until almost set.

2 min · hands on
4

Roll and repeat

Roll forward again - the existing log is now the core. Repeat the layer-pour-roll one more time with the final third of the egg mixture.

4 min · hands on
5

Rest and slice

Rest log seam-side-down 2 min - this sets the shape. Slice into 3/4-inch rounds. Scatter toasted sesame seeds.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of eggs Eggs and nori sheet rolled in

Lay 1 nori sheet on top of first egg layer before rolling - creates dark spiral. Adds about 2 minutes.

Instead of eggs Eggs and cheese

Sprinkle 1/4 cup shredded mozzarella on second layer (adds dairy).

Instead of served as banchan with rice In a lunchbox (doshirak) with rice and kimchi

Slice and pack in bento alongside rice and kimchi.

Gluten free Tamari for soy sauce

What keeps

Slices keep 2 days fridge - eaten cold or room temp. Classic doshirak (lunchbox) item.

The Week tab: breakfast, lunch and dinner laid out on the grid, with a Sunday cook of avocado toast and black bean tacos and a Wednesday cook of a berry smoothie bowl.
A week that gets more like you Start with the cuisines you crave, your spice level, and anything you'd rather avoid. It plans around the days you actually cook, not a default Sunday. Then every dish you rate teaches Maui, so your weeks keep moving toward your taste instead of settling into a routine.
Cook mode showing a Sunday session of 3 recipes and 18 steps, with one combined prep list where garlic is marked used in all 3 recipes and spring onions are marked Korean BBQ plus Thai Basil.
Three dishes, one prep list Everything chopped once, combined across every recipe in the session. Then Maui interleaves the steps so a marinade rests while something else browns.
Maui chat: the user asks to swap tonight for something easy, and Maui offers Caprese Salad and Avocado Toast with a confirm step.
Change anything by asking Swap a dish, dial the spice, make it dairy free. Maui shows you the change and what it does to your list before anything moves, and she remembers what you asked for.
