Greek Yogurt with Honey & Walnuts
Strained yogurt, thyme honey, toasted walnuts and cinnamon.

Use the thickest yogurt you can find - 10% if your shop has it. This is four ingredients, and thin yogurt turns it into a soup with nuts floating in it. If all you have is regular yogurt, strain it through a coffee filter in the fridge for an hour and it becomes the right thing.
Ingredients
Everything below makes 2 servings.
- 2 cupsfull-fat Greek yogurtthe thick strained kind, 5% or 10%
- 3 tbsphoneythyme honey if you can find it
- ½ cupwalnutshalves, to be toasted and broken
- ¼ tspground cinnamon
- ½ tsporange zestfrom half an orange

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Zest the orange before you juice or eat it - the zest is the part this recipe wants and it is impossible to get off a peeled orange.
Toast the walnuts
Toast the walnuts in a dry pan over medium heat, shaking often, until they smell nutty and darken a shade, about 3 min. Tip them straight out of the pan - they keep cooking in it - and break them up roughly with your fingers once cool enough to handle.

Spoon the yogurt into two bowls and swipe a hollow across the top. Pour the honey into the hollow and let it run. Scatter the toasted walnuts, then the ground cinnamon and orange zest over everything.

Quarter two ripe figs and press them cut-side-up into the yogurt. Adds about 2 minutes.
Scatter over - less traditional, but it is what most people have in. Adds about 1 minutes.
Thinner and sweeter - cut the honey by half or it overwhelms.
