Hot butter into the blender is the trick. Cold or warm butter won't emulsify. Keep it almost-boiling, drizzle slow, and the hollandaise sets itself. If it breaks: blend in 1 tbsp hot water and 1 tsp extra yolk.

Ingredients

Everything below makes 2 servings.

  • 4large eggs (for poaching)
  • 4 slicesturkey ham slices
  • 2English muffinssplit
  • 6 tbspunsalted buttermelted hot (for hollandaise)
  • 2large egg yolks (for hollandaise)
  • 1lemonjuiced
  • 1 tbspwhite vinegar (for poaching water)
  • ⅛ tspcayenne (pinch)
  • 1 tbspfresh chivesthinly sliced
  • ¾ tspkosher salt
  • ¼ tspblack pepper

In the app these rescale to however many people you're feeding.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Bring wide saucepan with 3 inches of water to a bare simmer (not boiling). Add the vinegar.
  2. Crack each egg into its own small bowl/ramekin (one at a time for safety).
  3. Melt 6 tbsp butter in a small saucepan or microwave - keep it HOT (this is critical for hollandaise).
1

Blender hollandaise

In blender: yolks, 1 tbsp lemon juice, salt. Blend 10 sec. With blender running, slowly drizzle in the hot melted butter in a thin stream. Sauce will emulsify and thicken to ribbon consistency. Add cayenne. If too thick: 1 tsp warm water to loosen. Keep warm by leaving in blender or transferring to a bowl in warm-water bath.

Poach eggs

Bring vinegar water to a BARE simmer (small bubbles, not rolling). Stir water to create a gentle vortex. Slip each egg in (one at a time) and poach 3 min for soft yolks. Lift out with slotted spoon onto paper towel.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of turkey ham Canadian bacon (not halal)

Sub turkey ham 1:1 for Canadian bacon - pork breaks halal.

Instead of turkey ham Smoked salmon (pescatarian)

Skip the protein sear - drape cold smoked salmon directly on the muffin. Saves about 3 minutes.

Instead of served as the meal With greens and lemon

Dress arugula simply, serve alongside to cut richness. Adds about 3 minutes.

What keeps

Hollandaise breaks on reheat. Poached eggs go rubbery.

Make-and-eat dish only. You CAN poach eggs ahead (shock in ice water, reheat 60 sec in hot water) but hollandaise has to be fresh.
