Before you start
  1. Rinse toor dal in 3 changes of water until water runs clear.
  2. Chop tomato. Thinly slice shallot and garlic. Mince ginger. Slit green chili.
  3. Chop a small handful of cilantro.
  4. Rinse basmati.

Rice

Combine rice with water and salt. Bring to boil, cover, simmer low 15 min, off heat 10.

Cook dal

In a medium pot combine rinsed dal, chopped tomato, turmeric, water, and salt. Bring to boil, reduce to simmer, partially cover, cook 25-30 min until lentils break down completely. Whisk briefly to smoosh into a creamy dal. Add water if too thick.

Tadka

When dal is nearly done: heat ghee in a small skillet over medium until shimmering. Add cumin and mustard seeds - let them pop 15 sec. Add sliced garlic, shallot, ginger, green chili. Fry 2-3 min until garlic is golden. Off heat, stir in kashmiri chili and asafoetida - it will sizzle violently.

Combine

Pour the hot tadka - every drop of it - into the dal. Stir. Add a squeeze of lemon, scatter cilantro. Taste, adjust salt.

Ladle dal over rice or alongside it.
