Cottage Cheese & Fruit Bowl
Cottage cheese, berries, honey, pistachios and black pepper.
Maui's an app that plans a whole week of dinners like this one. See how it works ↓
Cottage cheese got its reputation from the low-fat tub eaten plain off a diet plan. Full-fat, cold, with honey and cracked pepper over it, it is the same thing burrata gets praised for at four times the price - and it happens to land 26g of protein before 8am without touching a pan.
Ingredients
Everything below makes 2 servings.
- 1½ cupsfull-fat cottage cheese

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Crush the pistachios roughly under the flat of a knife rather than chopping them - you want uneven rubble, some dust and some halves, not neat dice.
Bowl the cheese
Spoon the cottage cheese into two bowls and spread it out toward the edges with the back of the spoon, leaving a shallow well in the middle. Full-fat, not low-fat - this is a five-ingredient dish and the fat is doing most of the work.
1 min · hands onFruit and crunch
Pile the mixed berries into the well and scatter the crushed pistachios over everything.

Drizzle the honey, then the olive oil. Crack the black pepper over the top and finish with flaky sea salt. The pepper is not a mistake - it is what turns this from a diet plate into something you actually want.

Every swap here is one Maui already knows how to make, including what it does to the timing.
Cut into thin wedges - ripe peach and cottage cheese is the summer version. Adds about 2 minutes.
One slice, toasted dark - adds a gluten allergen. Adds about 3 minutes.
30 seconds in a blender turns the curds into something like ricotta. Adds about 2 minutes.
What keeps
Nothing to batch - it is five minutes of assembly. The fruit can be washed and cut a day ahead, which is most of the five minutes.
