Chicken Quesadilla
Shredded chicken, molten Oaxaca and crisped flour tortilla.
Maui's an app that plans a whole week of dinners like this one. See how it works ↓
Rotisserie chicken is the move here - skip step 1's chicken cook entirely. Just dice the meat, mix with the sautéed onion-garlic-cumin base, and griddle.

- Finely dice ½ medium onion. Mince 2 garlic cloves.
- Shred 2 cups Oaxaca cheese. Chop a small handful cilantro.
- Cut lime into wedges.
Sauté filling
Heat olive oil in skillet over medium. Add onion, cook 4 min. Add garlic and cumin, 30 sec. Stir in shredded chicken and 1/4 cup water and salt. Warm 3 min until juicy but not wet. Stir in cilantro.
8 min · hands onAssemble
Wipe skillet. Lay a tortilla flat. Sprinkle cheese on half. Top with 1/4 of chicken filling. Fold tortilla in half.
Griddle
Melt 1/2 tbsp butter in skillet over medium. Add the folded quesadilla. Cook 2-3 min per side until tortilla is golden and cheese fully melted. Press lightly with spatula. Repeat with remaining 3.
10 min · hands onSlice and serve
Slice each quesadilla into 3 wedges. Serve with lime wedges and any salsa you have around.
1 min · hands onMake it yours
Every swap here is one Maui already knows how to make, including what it does to the timing.
Sauté 8 oz sliced mushrooms 6 min until golden; season with cumin and salt. Saves about 3 minutes.
Use 2 corn tortillas sandwich-style - works as a smaller quesadilla.
Jack melts identically; slightly milder.
Mozz works too - mild and stretchy.
What keeps
Cook chicken filling ahead (3 days). Quesadillas themselves must be fresh - reheated cheese turns rubbery and tortillas go limp.
Assemble and griddle one at a time.
