Restaurant gyros use a vertical rotisserie. At home, overlapping the chicken on a sheet pan and broiling for 2 min at the end gets you 90% of the way - crispy edges, juicy middle, no special equipment.

Ingredients

Everything below makes 4 servings.

  • 2 lbboneless skinless chicken thighs
  • ⅓ cupolive oil
  • 2lemon1 juiced, 1 wedged
  • 6garlic clovesminced (4 for marinade, 2 for tzatziki)
  • 1½ tbspdried oregano
  • 1 tspground cumin
  • 1 tspsmoked paprika
  • 1 cupwhole-milk greek yogurtfull-fat
  • ½english cucumbergrated
  • 2 tbspfresh dillchopped
  • 4pita bread
  • 2 mediumtomatothinly sliced
  • ½red onionthinly sliced
  • 1½ tspkosher salt
  • ½ tspfreshly ground black pepper

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Mince 6 garlic cloves (4 marinade, 2 tzatziki). Juice 1 lemon, wedge the other.
  2. Grate cucumber, squeeze dry HARD in a clean towel.
  3. Chop dill. Slice tomato and red onion.

Marinate

Whisk 1/4 cup olive oil, lemon juice, 4 minced garlic cloves, oregano, cumin, smoked paprika, 1 tsp salt, pepper. Add chicken thighs whole (don't cube - we want big slices later). Marinate 30 min minimum, up to overnight.

Roast

Preheat oven to 425F. Lay marinated chicken thighs flat on a sheet pan, slightly overlapping (stacked-style mimics gyros vertical spit). Roast 25-30 min until cooked through (165F) with browned edges. Broil 2 min at the end for extra char if you want.

Tzatziki

While chicken roasts: mix squeezed-dry grated cucumber with Greek yogurt, 2 minced garlic cloves, dill, olive oil, salt. Refrigerate.

Slice

Rest chicken 5 min. Slice across the grain into 1/4-inch strips - like cutting from a gyros spit. The crispy roasted edges should be visible.

Build

Warm pita 30 sec per side in a dry skillet or 10 sec in the microwave. Spread tzatziki down the center, layer sliced chicken, tomato, red onion. Squeeze lemon over the top. Wrap tight in foil for the full street-food feel.
