Cashew Chicken (Gai Pad Met Mamuang)
Stir-fried chicken, roasted cashews, bell pepper and dried chile.
Maui's an app that plans a whole week of dinners like this one. See how it works ↓
Toast the cashews in the wok first - store-bought 'roasted' cashews get a deeper roast and pick up the wok oil. It's a 90-second move that takes this from fine to actually good.

- Mince garlic. Break dried chiles. Whisk soy, oyster sauce, fish sauce, sugar, cornstarch, and 2 tbsp water in a small bowl.

Every swap here is one Maui already knows how to make, including what it does to the timing.
Cube thighs slightly larger; stir-fry 4 min instead of 3. Adds about 1 minutes.
Press 10 min, cube, sear until golden in step 2.
Stir-fry shrimp 90 sec; pull and add back at end. Saves about 2 minutes.
Cook brown rice separately (40 min). Adds about 20 minutes.
What keeps
Holds 4 days; cashews soften on reheat but flavor stays. Stir in a small handful of fresh-toasted cashews per serving if you want crunch back.
