Toast the cashews in the wok first - store-bought 'roasted' cashews get a deeper roast and pick up the wok oil. It's a 90-second move that takes this from fine to actually good.

  • 1¼ lbchicken breastcut into 3/4-inch cubes
  • 1 cuproasted unsalted cashews
  • 1red bell peppercut into 1-inch squares
  • ½ mediumyellow onioncut into wedges
  • 4dried red chilesbroken into 1-inch pieces
  • 3scallionscut into 1-inch lengths
  • 3garlic clovesminced
  • 2 tbspsoy sauce
  • 1½ tbspoyster sauce
  • 1 tspfish sauce
  • 1 tspsugar
  • 1 tspcornstarch
  • 3 tbspneutral oil
  • 1½ cupsjasmine ricerinsed

Before you start
  1. Start jasmine rice.
  2. Cube chicken; cut bell pepper into 1-inch squares; wedge onion; cut scallions into 1-inch lengths.
  3. Mince garlic. Break dried chiles. Whisk soy, oyster sauce, fish sauce, sugar, cornstarch, and 2 tbsp water in a small bowl.

Toast cashews

Heat oil in the wok over medium heat. Add cashews; toss 90 sec until a shade darker and fragrant. Remove to a plate.

Sizzle chiles

Increase heat to high. Add dried chiles to the empty wok; toast 20 sec until darker - do not let them burn. Push to side.

Sear chicken

Add oil and garlic; stir-fry 15 sec. Add chicken; stir-fry 3 min until just cooked through and edges browned.

Vegetables

Add bell pepper and onion; toss 90 sec until just tender-crisp.

Sauce and finish

Pour sauce over (give it a quick whisk first - cornstarch settles). Toss 30 sec until it thickens and coats. Add cashews back and scallions; toss once more. Plate over rice.

Stir-fry shrimp 90 sec; pull and add back at end. Saves about 2 minutes.

Cook brown rice separately (40 min). Adds about 20 minutes.
