Carne Asada Tacos

Cast iron beats a grill pan for indoor carne asada - heat it until it's smoking before the steak hits, and don't move the steak for the first 3 min. That's how you get the char without a real grill.
Ingredients
Everything below makes 4 servings.
- 1½ lbskirt steak
- 3lime2 juiced for marinade, 1 cut into wedges
- 1orangejuiced
- 4garlic clovesminced
- 1 tspground cumin
- 1 tspdried oregano (Mexican preferred)
- 3 tbspolive oil
- 1½ tspkosher salt
- 1jalapeñothinly sliced
- 12corn tortillas
- ½ mediumwhite onionfinely diced
- ½ cupfresh cilantrochopped

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Juice 2 lime and the orange into a mixing bowl. Mince 4 garlic cloves.
- Whisk lime juice and orange juice and garlic and cumin and oregano and olive oil and 1 tsp salt.
- Finely dice ½ medium onion. Chop a small handful of cilantro. Thinly slice the jalapeño.
- Cut remaining lime into wedges.
Marinate
Pour marinade over the steak in a shallow dish or zip bag. Marinate at room temp 20 min, or refrigerate up to 24 hr (better).

Heat a cast iron or grill pan over high until smoking. Pat steak dry, season with remaining salt. Sear 3-4 min per side for medium-rare (internal 130°F). Transfer to cutting board, rest 5 min.

While steak rests, warm corn tortillas in a dry skillet or directly over gas, 20-30 sec per side.

Slice steak against the grain into thin strips, then chop into bite-sized pieces. Pile onto warm tortillas. Top with diced onion, cilantro, jalapeño slices, and lime wedges.

Flank is thicker - grill 5 min per side instead of 3-4. Adds about 2 minutes.
Grill caps 4 min per side; slice after resting.
Note flour tortillas contain gluten.
Cook rice and heat beans during marinate. Adds about 5 minutes.

Marinade the steak up to 24 hr ahead - it gets better, not worse. Grill day-of (beef does not reheat well; it goes gray and chewy).
