Ingredients

  • 1¼ lbskirt steak
  • 4large flour tortillas (burrito size)
  • 1 cupwhite rice (uncooked)
  • 1 cancanned black beansdrained and rinsed
  • 2 mediumRoma tomatoesfinely diced
  • ½ mediumwhite onionfinely diced
  • 1jalapeñofinely diced
  • 3lime2 juiced, 1 for wedges
  • 4garlic clovesminced
  • 1 tspground cumin
  • 1 tspdried oregano (Mexican preferred)
  • 3 tbspolive oil
  • ½ cupfresh cilantrochopped
  • 1½ tspkosher salt
  • 1¾ cupswater

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Mince 4 garlic cloves. Juice 2 lime; cut 1 lime into wedges.
  2. Finely dice tomatoes, ½ medium onion, and the jalapeño for pico. Chop cilantro.
  3. Drain and rinse black beans.

Marinate

Whisk juice of limes, minced garlic, cumin, oregano, olive oil, and salt. Pour over steak. Rest 20 min at room temp.

Rice

Cook rice with water and salt. Boil, cover, simmer 18 min. Off heat, rest 5 min. Stir in cilantro and a squeeze of lime.

Pico and beans

Toss diced tomato, onion, jalapeño, cilantro, juice of lime, and salt for pico. In small skillet, warm black beans with a splash of water and pinch of salt, 4 min.

Grill steak

Heat cast iron over high. Sear steak 3-4 min per side for medium-rare. Rest 5 min on cutting board, then slice against grain, then chop.

Warm tortillas

Warm flour tortillas 20 sec per side in a dry skillet until pliable.

Roll

Lay tortilla flat. Layer rice, beans, steak, pico in a line just below center. Fold sides in, then roll tightly from the bottom up. Optional: sear seam-side down 1 min for color.
