Everything below makes 4 servings.

  • 2 cupsall-purpose flour
  • 2 tbspsugar
  • 2 tspbaking powder
  • ½ tspbaking soda
  • ½ tspkosher salt
  • 1¾ cupsbuttermilk
  • 2large eggs
  • 4 tbspunsalted butter (for batter)melted and cooled
  • 1 tspvanilla extract
  • 3 tbspunsalted butter (for griddle and serving)
  • ½ cupmaple syrupfor serving

Before you start
  1. Melt 4 tbsp butter in microwave, let cool slightly.
  2. Set oven to 200°F if you want to keep pancakes warm as you go.

Dry ingredients

In large bowl, whisk flour, sugar, baking powder, baking soda, salt.

Wet ingredients

In a second bowl (or measuring cup), whisk buttermilk, eggs, melted butter, vanilla until smooth.

Combine - gently

Pour wet into dry. Fold with a spatula JUST until no streaks of flour remain. LUMPS ARE GOOD. Overmixing = tough, flat pancakes. Let batter rest 5 min while pan heats.

Heat the pan

Heat nonstick skillet over medium. Drop a tiny knob of the serving butter - when it foams and goes still (not brown), pan is ready.

Cook pancakes

Ladle 1/3 cup batter per pancake. Cook until bubbles pop on the surface and edges look set (2-3 min), then flip and cook 90 sec more until golden. Add butter to the pan as needed between batches. Transfer to a sheet pan in the warm oven (single layer).

Serve

Stack on plates, top with a pat of butter and a glug of maple syrup.

Make it yours

Instead of maple syrup and butter With fresh berries

Add 1 cup berries to batter OR scatter on top and macerate with sugar. Adds about 2 minutes.

Instead of maple syrup and butter With bacon (not halal)

Cook 8 strips bacon in a second pan while pancakes go. Adds about 10 minutes.

Gluten free Gluten-free 1:1 flour blend for all-purpose flour

Dairy free Oat milk for buttermilk, neutral oil for unsalted butter, neutral oil for unsalted butter

Also add 1.5 tbsp lemon juice and let sit 5 min to sour.

What keeps

Pancakes are at their best as they come off the griddle. If holding for a crowd, keep on a sheet pan in a 200°F oven, single layer (not stacked - they steam each other into rubber).

Cold leftovers go to dog food, not your plate.
