Breakfast Tacos

Ingredients
Everything below makes 4 servings.

- 1 cancanned black beansdrained and rinsed
- 12corn tortillas
- ½ mediumyellow onionfinely diced
- 2garlic cloveminced
- ½ tspground cumin
- ½ tspsmoked paprika
- 2 mediumRoma tomatofinely diced for pico
- 1jalapeñofinely diced
- 1 tbspbutter
- 1 tbspolive oil
- ¼ cupfresh cilantrochopped
- 1limecut into wedges
- 1 tspkosher salt

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Drain and rinse black beans. Finely dice ½ medium onion. Mince 2 garlic cloves.
- Dice tomato and jalapeño for pico. Chop cilantro. Wedge lime.
- Crack 8 eggs into a mixing bowl, beat lightly with a pinch of salt.
Spice beans
Heat olive oil in small skillet over medium. Add diced onion, cook 3 min. Add garlic and cumin and smoked paprika, 30 sec. Stir in beans and 1/4 cup water and 1/2 tsp salt. Simmer 5 min, mashing some beans against the pan.

Toss diced tomato and jalapeño and 1/2 of the cilantro and juice of half a lime and pinch salt in a small bowl.
Scramble
Melt butter in large skillet over medium-low. Pour in beaten eggs. Let sit 30 sec, then gently push curds with a spatula every 30 sec, 3-4 min total until just set but still glossy. Off heat - eggs keep cooking.

Warm corn tortillas in a dry skillet 20 sec per side. Spoon spiced beans onto each tortilla, top with eggs, pico, remaining cilantro. Squeeze lime.

Brown 1/2 lb chorizo 5 min in skillet first; reserve, scramble eggs in fat. Adds about 3 minutes.
Dice and pan-fry 1 lb potatoes 12 min until golden. Adds about 8 minutes.
Flour is the Texas-style choice - contains gluten.
What keeps
Spiced beans / chorizo hold 4 days. Scrambled eggs MUST be fresh - they go rubbery on reheat.
