Maui says

Grate the apple in the morning, not the night before. Bircher made entirely the night before goes grey and tastes of old fruit - the original Swiss version had the apple grated at the table, and the difference is not subtle.

Ingredients

Everything below makes 2 servings.

  • 1 cuprolled oats
  • ¾ cupapple juicecloudy, unsweetened
  • ¾ cupplain Greek yogurt
  • 1 mediumapplecoarsely grated, skin on, at the last moment
  • ½ mediumlemonjuiced
  • 1 tbsphoney
  • ⅓ cuphazelnutstoasted and roughly chopped
  • ¾ cupmixed berriesfor the top

In the app these rescale to however many people you're feeding.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Toast the hazelnuts in a dry pan over medium heat, 4 min, shaking. Tip onto a tea towel and rub - the papery skins come off and they taste sweeter without them. Chop roughly.
1

Soak the oats

Stir the rolled oats and apple juice together in a bowl. Lid on, fridge, at least 2 hours or overnight. Juice rather than milk is what makes this lighter than American overnight oats - it soaks in cleaner and the whole thing stays loose.

Grate the apple in

In the morning, grate the apple coarsely on a box grater, skin and all, straight into the soaked oats. Squeeze the lemon over immediately and stir - the acid is the only thing standing between you and brown apple, and thirty seconds of delay shows.

Fold and finish

Fold in the plain Greek yogurt and honey until it comes together loose and creamy. Spoon into bowls and top with the toasted hazelnuts and mixed berries.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Swap With extra yogurt spooned over

A dollop on top rather than stirred through - keeps some tang separate.

Instead of berries on top With raisins soaked in with the oats

2 tbsp, added at the soak - they plump overnight.

Instead of Greek yogurt Coconut yogurt

Sweeter than dairy - drop the honey to 1 tsp.

Gluten free Certified gluten-free rolled oats for rolled oats

Oats are naturally GF but cross-contaminated in most mills.

What keeps

Holds 3 days, though the apple browns slightly after the first - the lemon juice slows it but does not stop it. Two days is the sweet spot.

The Week tab: breakfast, lunch and dinner laid out on the grid, with a Sunday cook of avocado toast and black bean tacos and a Wednesday cook of a berry smoothie bowl.
A week that gets more like you Start with the cuisines you crave, your spice level, and anything you'd rather avoid. It plans around the days you actually cook, not a default Sunday. Then every dish you rate teaches Maui, so your weeks keep moving toward your taste instead of settling into a routine.
Cook mode showing a Sunday session of 3 recipes and 18 steps, with one combined prep list where garlic is marked used in all 3 recipes and spring onions are marked Korean BBQ plus Thai Basil.
Three dishes, one prep list Everything chopped once, combined across every recipe in the session. Then Maui interleaves the steps so a marinade rests while something else browns.
