Grate the apple in the morning, not the night before. Bircher made entirely the night before goes grey and tastes of old fruit - the original Swiss version had the apple grated at the table, and the difference is not subtle.
Ingredients
Everything below makes 2 servings.
- 1 cuprolled oats
- ¾ cupapple juicecloudy, unsweetened
- ¾ cupplain Greek yogurt
- 1 mediumapplecoarsely grated, skin on, at the last moment
- ½ mediumlemonjuiced
- 1 tbsphoney
- ⅓ cuphazelnutstoasted and roughly chopped
- ¾ cupmixed berriesfor the top

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Toast the hazelnuts in a dry pan over medium heat, 4 min, shaking. Tip onto a tea towel and rub - the papery skins come off and they taste sweeter without them. Chop roughly.
Soak the oats
Stir the rolled oats and apple juice together in a bowl. Lid on, fridge, at least 2 hours or overnight. Juice rather than milk is what makes this lighter than American overnight oats - it soaks in cleaner and the whole thing stays loose.

In the morning, grate the apple coarsely on a box grater, skin and all, straight into the soaked oats. Squeeze the lemon over immediately and stir - the acid is the only thing standing between you and brown apple, and thirty seconds of delay shows.

Fold in the plain Greek yogurt and honey until it comes together loose and creamy. Spoon into bowls and top with the toasted hazelnuts and mixed berries.

What keeps
Holds 3 days, though the apple browns slightly after the first - the lemon juice slows it but does not stop it. Two days is the sweet spot.
