Beef Bulgogi

DON'T crowd the pan. Bulgogi needs single-layer contact to char - that caramelized edge is the whole point. Cook in 3-4 batches if you have to.

Everything below makes 4 servings.
- 1½ lbribeye steakfrozen 30 min, then sliced paper-thin against the grain
- ⅓ cupsoy sauce
- ½Asian peargrated
- 2 tbspmirin
- 2 tbspbrown sugar
- 2 tbsptoasted sesame oil
- 6garlic clovesminced
- 1 tbspfresh gingergrated

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Freeze ribeye 30 min, slice paper-thin (1/8-inch) against the grain.
- Grate pear and ginger. Mince garlic. Slice onion and scallions.
- Whisk soy and pear and mirin and brown sugar and sesame oil and garlic and ginger and pepper for marinade.
Marinate
Toss sliced beef and onion and scallions with the marinade. Let sit 20-30 min at room temp (or up to 6 hr fridge).

Heat neutral oil in grill pan over HIGH heat. Working in batches, spread beef and onions in single layer. Sear 1-2 min per side until edges char and sauce caramelizes. Keep moving - single layer matters for char.

Pile bulgogi onto a serving platter. Scatter toasted sesame seeds. Serve with lettuce leaves and ssamjang and rice - diners wrap their own bites.

Sirloin is leaner - slice slightly thicker (3/16-inch) and don't overcook.
Slice thin, marinate same way, sear 4 min per side. Adds about 5 minutes.
