DON'T crowd the pan. Bulgogi needs single-layer contact to char - that caramelized edge is the whole point. Cook in 3-4 batches if you have to.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Freeze ribeye 30 min, slice paper-thin (1/8-inch) against the grain.
  2. Grate pear and ginger. Mince garlic. Slice onion and scallions.
  3. Whisk soy and pear and mirin and brown sugar and sesame oil and garlic and ginger and pepper for marinade.
1

Marinate

Toss sliced beef and onion and scallions with the marinade. Let sit 20-30 min at room temp (or up to 6 hr fridge).

2

Sear

Heat neutral oil in grill pan over HIGH heat. Working in batches, spread beef and onions in single layer. Sear 1-2 min per side until edges char and sauce caramelizes. Keep moving - single layer matters for char.

Plate

Pile bulgogi onto a serving platter. Scatter toasted sesame seeds. Serve with lettuce leaves and ssamjang and rice - diners wrap their own bites.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of ribeye Sirloin

Sirloin is leaner - slice slightly thicker (3/16-inch) and don't overcook.

Instead of ribeye Chicken thigh

Slice thin, marinate same way, sear 4 min per side. Adds about 5 minutes.

Instead of lettuce wraps and ssamjang and rice Rice only

Skip lettuce - bulgogi over rice.

Instead of lettuce wraps and ssamjang and rice Kimchi and rice

Add kimchi as banchan.

What keeps

Marinated beef freezes 1 month raw - meal-prep gold. Cooked bulgogi reheats well in a hot skillet (don't microwave; it gets rubbery).

The Week tab: breakfast, lunch and dinner laid out on the grid, with a Sunday cook of avocado toast and black bean tacos and a Wednesday cook of a berry smoothie bowl.
A week that gets more like you Start with the cuisines you crave, your spice level, and anything you'd rather avoid. It plans around the days you actually cook, not a default Sunday. Then every dish you rate teaches Maui, so your weeks keep moving toward your taste instead of settling into a routine.
