Pre-roasting the tomatoes solo is the unfussy chef's trick - it gets them blistered and saucy by the time the cod is just cooked through. Skip that step and you'll have raw tomatoes with overcooked fish.

Instructions

Knife work first, then the stove. Nothing below asks you to chop while something burns.

Before you start
  1. Preheat oven to 400°F (200°C).
  2. Pat cod fillets dry. Season both sides with 3/4 tsp salt and pepper.
  3. Halve cherry tomatoes and olives; slice shallot; mince garlic; zest and juice 1 lemon; wedge the other; pull thyme leaves; chop parsley.
1

Build base

In the baking dish, toss cherry tomatoes, olives, shallot, garlic, capers, olive oil, oregano, thyme, lemon zest, lemon juice, and salt. Spread in an even layer.

2

Pre-roast

Roast the tomato-olive base alone for 8 minutes - tomatoes need to start breaking down before the fish goes in or the cod will overcook waiting for them.

8 min · hands off
3

Nestle cod

Nestle cod fillets into the tomato mixture, spooning some over the tops. Drizzle with remaining olive oil.

1 min · hands on
4

Bake

Return to oven. Bake 12-14 min until cod flakes easily with a fork at the thickest point (130-135°F internal - it carries over).

13 min · hands off
5

Serve

Scatter parsley over the dish. Serve fillets with plenty of the tomato-olive juices spooned over. Lemon wedges on the side.

Make it yours

Every swap here is one Maui already knows how to make, including what it does to the timing.

Instead of cod fillets Halibut fillets

Thicker; bake 18-20 min total. Adds about 2 minutes.

Instead of cod fillets Haddock fillets

Same as cod; check at 14 min for thin fillets.

Instead of cod fillets Salmon fillets

Same timing; salmon stays moister at 12-14 min.

Instead of served with the pan juices only Lemon rice

Cook 1 cup rice with broth; finish with lemon zest and olive oil. Adds about 18 minutes.

What keeps

Eat fresh - baked fish dries out on reheat. Cherry tomato-olive mixture can be prepped 24 hr ahead, kept in fridge.
