Baked Cod with Olive Oil + Herbs

Pre-roasting the tomatoes solo is the unfussy chef's trick - it gets them blistered and saucy by the time the cod is just cooked through. Skip that step and you'll have raw tomatoes with overcooked fish.
Ingredients
Everything below makes 4 servings.
- 4cod fillets~6 oz each, patted dry
- 2 cupscherry tomatoeshalved
- ½ cupkalamata olivespitted, halved
- 1 mediumshallotthinly sliced
- 4garlic clovesminced
- 5 tbspolive oil
- 2lemon1 zested and juiced, 1 wedges
- 1 tspdried oregano
- 4 sprigsfresh thymeleaves only

- ¼ cupfresh parsleychopped
- 1 tspkosher salt
- ½ tspblack pepper

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Preheat oven to 400°F (200°C).
- Pat cod fillets dry. Season both sides with 3/4 tsp salt and pepper.
- Halve cherry tomatoes and olives; slice shallot; mince garlic; zest and juice 1 lemon; wedge the other; pull thyme leaves; chop parsley.
Build base
In the baking dish, toss cherry tomatoes, olives, shallot, garlic, capers, olive oil, oregano, thyme, lemon zest, lemon juice, and salt. Spread in an even layer.

Roast the tomato-olive base alone for 8 minutes - tomatoes need to start breaking down before the fish goes in or the cod will overcook waiting for them.

Nestle cod fillets into the tomato mixture, spooning some over the tops. Drizzle with remaining olive oil.

Return to oven. Bake 12-14 min until cod flakes easily with a fork at the thickest point (130-135°F internal - it carries over).

Scatter parsley over the dish. Serve fillets with plenty of the tomato-olive juices spooned over. Lemon wedges on the side.
