Baja Fish Tacos

If frying feels like a lot, pan-sear instead: skip the batter, sear cod in 2 tbsp olive oil with chili powder and cumin, 3 min per side. Lighter version, same flavor structure.

- 1 cupall-purpose flour
- 1 cupsparkling watercold
- 4 cupsneutral oil for frying
- ¼ headpurple cabbagethinly shredded
- 3lime2 juiced, 1 cut into wedges

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Cut cod into 1x3-inch strips. Pat very dry; season lightly with salt.
- Thinly shred 1/4 head purple cabbage.
- Mince 2 chipotle peppers. Grate 1 garlic clove.
- Juice 2 limes; cut the third into wedges. Chop a small handful of cilantro.
Slaw and crema
Toss shredded cabbage with lime juice and a pinch of salt. Whisk crema with chipotle, garlic, lime juice, and a pinch of salt. Set both aside.

Pour 2 inches of oil into deep skillet. Heat to 375°F (use a thermometer or test with a flick of batter - should sizzle immediately).

Whisk flour with 1 tsp salt. Pour in cold sparkling water, whisk to a pancake-batter consistency (lumps are fine). Use immediately.

Dip cod strips in batter, let excess drip, lower carefully into oil. Fry in batches of 4-5 pieces, 3-4 min, flipping once, until deep golden. Drain on wire rack.

Warm corn tortillas in a dry skillet or over gas, 20-30 sec per side.

Top each tortilla with crispy cod, slaw, a drizzle of chipotle crema, cilantro, and a lime wedge.

Halibut is firmer; fry same time, cut slightly smaller pieces.
Shrimp fry in 2-3 min total; pull when batter is golden. Saves about 3 minutes.
Cook rice and heat beans during fry; serve fish over the bowl. Adds about 5 minutes.
Skip the crema, double the lime.
What keeps
Beer batter doesn't survive fridge - make slaw and crema ahead (3 days), but batter and fry day-of. Reheated fried fish is sad.
