- 1 small headcauliflowercut into 1-inch florets
- 1 mediumyellow onionfinely diced
- 1 mediumRoma tomatochopped
- 4garlic clovesminced

- 1green chili (serrano)finely chopped
- 3 tbspolive oil
- 1 tspcumin seeds
- 1½ tspground coriander
- ¾ tspground turmeric
- 1 tspkashmiri chili powder
- 1 tspgaram masala
- ½ tspamchur (dried mango powder)
- ¼ cupfresh cilantrochopped
- ½lemonfor squeezing
- 1½ cupsbasmati ricerinsed
- 1½ tspkosher salt
- 2¼ cupswater

Instructions
Knife work first, then the stove. Nothing below asks you to chop while something burns.
- Cube potatoes 3/4 inch. Cut cauliflower into 1-inch florets.
- Finely dice onion. Chop tomato. Mince garlic, ginger. Finely chop green chili.
- Chop a small handful of cilantro.
- Rinse basmati.
Rice
Combine rice with water and salt. Bring to boil, cover, simmer low 15 min, off heat 10.

Heat oil in skillet over medium-high. Add cumin seeds - sizzle 15 sec until fragrant.
1 min · hands onAromatics
Add onion and salt; cook 5 min until soft. Add garlic, ginger, green chili - cook 1 min. Add coriander, turmeric, kashmiri chili - toast 30 sec.
7 min · hands onAdd veg
Add chopped tomato; cook 2 min until it starts breaking down. Add potatoes and cauliflower and remaining salt. Toss to coat with spice paste.
3 min · hands onSteam-saute
Add 1/4 cup water, cover, reduce heat to medium-low. Cook 15 min, stirring every 5, until potatoes are knife-tender and cauliflower is just cooked through.
15 min · hands offChar and finish
Remove the lid, increase heat to medium-high. Cook 3-4 min uncovered, stirring less often, to char the edges. Stir in garam masala and amchur. Squeeze lemon, scatter cilantro, taste, adjust salt.

Saute cauliflower rice 4 min with salt. Saves about 10 minutes.
What keeps
Keeps 4 days but loses some texture - cauliflower softens. Best eaten fresh; if batching, slightly undercook the gobi by 2 min.
