  • 1 lbYukon gold potatoescut into 3/4-inch cubes
  • 1 small headcauliflowercut into 1-inch florets
  • 1 mediumyellow onionfinely diced
  • 1 mediumRoma tomatochopped
  • 4garlic clovesminced
  • 1 tbspfresh gingerminced
  • 1green chili (serrano)finely chopped
  • 3 tbspolive oil
  • 1 tspcumin seeds
  • 1½ tspground coriander
  • ¾ tspground turmeric
  • 1 tspkashmiri chili powder
  • 1 tspgaram masala
  • ½ tspamchur (dried mango powder)
  • ¼ cupfresh cilantrochopped
  • ½lemonfor squeezing
  • 1½ cupsbasmati ricerinsed
  • 1½ tspkosher salt
  • 2¼ cupswater

Before you start
  1. Cube potatoes 3/4 inch. Cut cauliflower into 1-inch florets.
  2. Finely dice onion. Chop tomato. Mince garlic, ginger. Finely chop green chili.
  3. Chop a small handful of cilantro.
  4. Rinse basmati.

Rice

Combine rice with water and salt. Bring to boil, cover, simmer low 15 min, off heat 10.

Bloom cumin

Heat oil in skillet over medium-high. Add cumin seeds - sizzle 15 sec until fragrant.

Aromatics

Add onion and salt; cook 5 min until soft. Add garlic, ginger, green chili - cook 1 min. Add coriander, turmeric, kashmiri chili - toast 30 sec.

Add veg

Add chopped tomato; cook 2 min until it starts breaking down. Add potatoes and cauliflower and remaining salt. Toss to coat with spice paste.

Steam-saute

Add 1/4 cup water, cover, reduce heat to medium-low. Cook 15 min, stirring every 5, until potatoes are knife-tender and cauliflower is just cooked through.

Char and finish

Remove the lid, increase heat to medium-high. Cook 3-4 min uncovered, stirring less often, to char the edges. Stir in garam masala and amchur. Squeeze lemon, scatter cilantro, taste, adjust salt.

Spoon aloo gobi over rice.
